Introduction:

Beta-casein is a protein within caseins. It has been discovered that there is a variant in the CSN2 gene that generates the production of beta-casein protein whose milk is more tolerable and easily digestible. Kappa Casein has a positive effect on coagulation time and cheese production yield due to firmer rennet production.
